I came across this yummy summer recipe on The Scrumptious Pumpkin and I just had to try it. I'm always looking to simple recipes to make during the week, and this one is quick and easy. Best of all, there is no baking required so it's perfect for summer!
The dressing for the crab salad involves whisking dijon mustard and red wine vinegar and then slowing whisking in extra virgin olive oil. After this is done, season with salt and pepper. Any dressing with no mayo involved is a healthy dressing in my book! Next, chop the tomato, yellow bell pepper (really you can use whatever color pepper you want) and chives. Add the veggies and the crabmeat to the dressing and mix well.
Once the salad is nicely mixed, slice each avocado in half and take out the pit. Next, use half the lemon (I only needed half) and squeeze the juice over each half of the avocado to prevent it from discoloring.
You'll need to scoop out some of the avocado to make room for the salad. Once this is removed, just add the avocado to the crab salad mixture. It only makes it better. Next spoon the crab salad into each avocado and top with more chives. That's it!
