I'm so beyond excited about how close St. Patrick's Day is! My sister in law is currently pregnant with my 2nd baby niece and she is due on St. Patrick's Day! With the luck of the Irish on our side, the whole family is hoping for a March 17th baby. Second to the baby's due date, I am most excited about all of the fabulous St. Patrick's Day recipes I've been spotting around the web. Here are some of my favorites (and also a peek at our Saint Patrick's Day invitations in case you haven't seen them yet!)
Irish Soda Bread - I made this last week (too excited to wait), and snapped a photo. I altered this recipe just slightly by soaking the raisins in Irish whiskey first and by adding a little extra sugar. It was pretty yummy if I say so myself.
Shamrock Shake Copy Cat - I had never heard of a McDonald's shamrock shake but this image popped up in my google reader the other day so I had to check out the recipe. Vanilla ice cream, peppermint extract and milk: could not be any easier! Food coloring makes it the perfect leprechaun hue and I bet kids would love it!
Red Velvet Revisited - I can't tell you how long I've had these St. Paddy's cake balls bookmarked from Bakerella. I love them so.
Corned Beef & Cabbage Pizza - I don't eat corned beef and cabbage but I do like this idea for 5 different ways to enjoy the Irish classic, like in a pizza version.
